Tradition is a virgin oil with aromas of black olive, tapenade and truffle. This highly prized oil had disappeared with the advent of modern mills. They have recreated it by "maturing" the olives in a very controlled manner in the absence of air and humidity with precise monitoring of temperatures before extraction of the oil.
Characteristic of Fruité Noir :
The oil from matured olives releases notes of black olives, tapenade, mushroom and truffle. These olive oils are different from green fruity because they have no fresh fruit character or vegetal aroma. No bitterness, no ardency.
